Grilled Chicken Quesadilla
Grilled Chicken QuesadillaIngredients:
4 chicken breast (boneless, skinless)
4 large flour tortillas (10 inch)
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese 2 slices American cheese
Litehouse Jalapeno Ranch Dressing or Litehouse Lite Salsa Ranch Dressing
Litehouse Salsa (optional)
Directions:
Preheat barbecue grill. Rub chicken with olive or canola oil; salt & pepper each side. Grill for 3-5 minutes per side. When chicken is done, slice it very thin.
To build quesadillas: Preheat 12" skillet or griddle at medium heat. Spread about 2 Tbsp. Litehouse Jalapeno Ranch or Lite Salsa Ranch Dressing over the tortilla. When the skillet is hot, lay the tortilla (dressing side up) in the pan. Arrange about 1/4 cup each shredded cheese on one half of the tortilla. Tear up half a slice of American cheese and arrange it on the other cheeses. Arrange 1/4 of the sliced chicken over the cheese.
Fold the half with just the dressing on it over onto the ingredients and press down with a spatula. Cook for about 1 minute, then turn the quesadilla over and cook for a couple more minutes or until the cheese is melted. Put on cutting board; using a pizza cutter, slice into four pieces and serve hot with Litehouse Salsa.
Repeat with the remaining ingredients. Makes 4 quesadillas
